This is a raw healthy holiday salad. With all the extra sweets and goodies we eat over the holidays it is nice to have a hearty and healthy salad. I don’t know about you by the time Christmas rolls around I have indulged in way too much food. This Kale Holiday Salad helps to give your body some great fiber and keep you healthy over the holidays. This is great served alongside your holiday meal or just a healthy option for lunch or dinner. It stores well for several days. It can be served with grilled chicken for those wanting some extra protein.

Holiday Kale Salad with Cranberries and Gorgonzola and Fig Dressing
Directions: In food processor add balsamic vinegar, olive oil, mustard and fig preserves. Pulse until all ingredients are incorporated.
Salad: In large salad platter layer your ingredients and drizzle fig dressing, and garnish with cranberries, pepitas, gorgonzola cheese and serve.
