Oh how I love a good dessert! This easy recipe with blow your socks off. It is delicious – so good in fact that you will want to lick the entire bowl clean. I made it for a brunch I hosted this week. People were going back for seconds and thirds – it wasy totally yummy! The key ingredient was the vanilla bean paste. It ready made the pudding extra delicious . . . .
Coconut Pudding and Vanilla Bean Cookie Trifle
Directions: *Mix coconut pudding as directed on box using half and half then mix in the vanilla bean paste. Chill pudding in refrigerator until ready to layer. In trifle dish layer the cookies, pudding and cool whip until you have at least three layers of each. This looks best in a trifle dish. Your top layer should be cool whip.
Best if made one day ahead to allow cookies to soften. This recipe can be divided in half if making it for a smaller group – it can be put into individual cups. Enjoy?
